It may be made with oil or ghee or no fat. Butter burns and hence it is not good for frying spices, it is sometimes added as a dollop while eating. Fresh white butte,r minus the colors added in the west, is considered good. Butter is not good for frying spices as it burns quickly, ghee does not. Vegans avoid ghee for obvious reasons.
